The very easiest is to use a wiki farm like Wikia.  Personally, having used phpWiki and Tikiwiki for years, I wouldn't waste my time installing anything but Mediawiki, though that TiddlyWiki sounds attractive, as long as it uses WikiCreole.

Also look at the Google Sites feature for Google Apps for Your Domain, if you have that. It is a simple wiki that you don't have to host because Google is hosting it.

http://www.wikispaces.com/ is also pretty good and has free options.

But before I begin to plow through these first hits, I hope the plug
brain trust might point me in the right direction.  I do have have
web hosted space where I can install something and I just want 4 or
5 people to be able to access a simple "page" where each participant
can quickly and easily add to the content with simple text.
