Zoom H2N fits that list for me. https://www.zoom-na.com/products/field-video-recording/field-recording/zoom-h2n-handy-recorder I haven’t used it with Linux, but it has a line out port if the USB connection is problematic. Not sure if it fits your idea of inexpensive.
