I think it's because somebody somewhere decided that tablets are the awesome hip cool thing, so everything must look like them, no matter what that does to functionality or usability. And putting touch screens on vertically mounted monitors seems like a bad idea, at least if http://www.catb.org/jargon/html/G/gorilla-arm.html is anything to go by.
