I use audacity for recording. With the additional plugins installed you could save as a wav/mp3/ogg. It has a lot of cool features and it's pretty stable. I use it all the time. I'm not sure how to fix your mixer, what I did when that happen to me was open the Alsa mixer, enabled everything and started messing with turning on/off stuff. Eventually i got it. Hope this helps.
