I'm just a newbie, but why not Gentoo? With USE-flags, Portage is a highly customizable (and easy to use) package manager and seems to be instrumental in building a fast and lean system. A simple bash script added to crontab emerges, syncs and updates world as frequently as is necessary. Also, considering the "Hardened Gentoo Project", isn't Gentoo ideal for security and stability when properly patched, compiled and configured? If support is required then I understand RHEL, etc., but if you just want a LAMP server I would like to think that Gentoo would be a solid choice.
