I'm pretty sure that will work fine.  Just be sure that MySQL isn't 
running when you alter the files.

FYI - this is the same process the mysqlhotcopy script uses for making 
backups.  Instead of dumping SQL commands, it just makes copies of the 
mysql /data directory.
