I have been impressed with BackupPC (http://backuppc.sourceforge.net/) and use it to backup some Linux servers but you can also backup windows machines. It backs up to local disk which you can then dump out to tape or optical media using some other product. I would probably do this for regular backups and then dump a full archival backup once a week or so to tape. Good luck.
