This allows you to create one volume from many disks and remove or add disks to this volume. http://www.tldp.org/HOWTO/LVM-HOWTO/ I don't know which would compare to Windows Dynamic Disk but RAID certainly is availble, mature and is very stable. Whoever claimed otherwise does not know what they are talking about.
