What if they are sniffing in some inbetween point or the client that is 
making a connection is on a wireless network ... thus broadcasting the 
"secret knock" to anyone who cares to listen?  This knock will contain 
the destination IP ... and all the relevant info (port sequence, 
appropriate flags).

I don't think assuming someone can't hear is a safe assumption.  Thus we 
encrypt.
