I'm not sure if you can exactly what you are asking for, but what you can do is you can have per-folder hooks in mutt so that depending on what folder you are in, you can change from, organization, and other settings. If you want to do it on a per message basis, it might be easier to add macros to your .vimrc to populate 'From' with the correct info and edit the headers before sending. The mutt webpage has detailed docs on the folder-hooks and all the settings you can change.
