In the case of spaces in the filename, I think you'd need double-quotes around $i though, as in:
/bin/ls *.php | while read i ; do echo "text" >> "$i" ; done

Also, the find command can do all that w/out the while loop at all. I think it'd be something like this:
/bin/find ./ -name "*.php" -exec echo "processing {}" \; -exec echo "text" >> {} \;
