When I need to securely erase a harddrive I use Darik's Boot and Nuke 
[1]. It's a bootable CD that will overwrite the drive for 1 or up to 35 
passes.

 From a higher level there are the utilities shread and srm that you may 
already have installed. These work at a filesystem level.
