Projector Video "Swims"

I would try running Xconfigurator when the projector was running.  I have
had 
good luck using it to find the right refresh rate, frequencies, and
resolution 
on my machines.  Perhaps it can find the right combination of settings for
you 
to avoid the screen effects.
