It doesn't modify the original file.

If you don't want to create a copy of the directories that you're
transferring, you can do it something like this:

  cd somewhere
  tar cf - somedir1 somedir2 | ssh remote.host.com 'cd somewhereelse; tar xvf -'

Or:

  ssh remote.host.com 'cd somewhere; tar cf - somedir1 somedir2' \
    | ( cd somewhereelse; tar xvf - )
